Cilantro Avocado Bowl
This fat burning recipe is high in both protein and fiber. It is loaded with vitamins, minerals and antioxidants.
Prep Time: 30 minutes
Serves 2-3 people

Ingredients
16 oz black beans
16 oz kidney beans
16 oz corn
16 oz chopped tomatoes
4 oz green chiles
1 cup white rice
2 cups water
1 cup dried cranberries
1 avocado
¼ cup fresh cilantro
1 tbsp of lime juice
Seasonings
1 ½ tsp garlic powder
1 tsp onion powder
1 ½ tsp cumin powder
1 tsp Himalayan pink salt
1 tsp pepper
Dressing
Mix cilantro, avocado, and lime juice in a food processor.
Preparation
Combine water and rice in a saucepan. Cover and bring to a boil. Reduce heat to low. Cook until water is absorbed (about 10-15 minutes). Drain and rinse black beans, kidney beans and corn in a colander. Combine in a saucepan with tomatoes and chiles and cook until they are just warmed through. Remove from heat and mix with rice. Add seasonings. Mix in cranberries and avocado dressing.
